I can’t believe it’s been over a year since I made the decision to stop eating land animals. This space of time completely flew by! I didn’t make a big deal about it when I made the decision because honestly, I wasn’t sure I could stick to it. And well, if you put it on the internet there are literally a ton of people to hold you accountable for your actions and I didn’t think I was ready for that type of commitment. SURPRISE! I guess I was because I made the decision and never looked back.

My goal is to eventually be 100% vegan, but after doing tons of research I realized changing your lifestyle is a PROCESS. Forcing yourself in too deep too fast can lead you running towards the emergency exit and back to everything you know as comfortable and “normal”. So, with that in mind, I decided to start SLOWLY! Plus, even eliminating just land animals from my diet will impact the planet and my health in a positive way. So I'm off to a great start!
A year later and I am now eating about 80% vegan and I only eat sea food, eggs, or real cheese when I am out of the house typically on “special occasions” #treatyoself
I am beyond thankful to have moved to a city that is full of vegetarian options. I can honestly say this transition was way harder when I was still living in Utah, but now that I am in California, eating out and finding something gluten free and vegetarian is insanely easy. Wooooo!!
In celebration of my one year, I wanted to do a little round up of all my favorite Vegetarian blogs + my favorite recipe from each blog. Because honestly, I would NOT have survived without these people, their recipes, and of course their social media. They don’t have a clue who I am but sending them so much gratitude for creating such magical dishes to keep my belly happy and my body fueled!
Okay, so they have recipes for meat eaters too, but I am pretty pleased with the 18 pages of vegetarian recipes, and they are tasty too so I can’t skip them from my list.
