Banana Almond Pancakes – Gluten Free

banana almond pancakes

Eating gluten free often means consuming a lot of foods that rate “eh” on the scale of deliciousness, especially when it comes to breakfast goodies.  About a year ago I ran into Buzzfeed’s Banana Pancake Recipe and fell in love, but they were still missing that comfort feeling of gluten-filled pancakes.  So, I went to work on attempting to “hack” them. This is my favorite version that I’ve come up with so far.  I hope these satisfy your breakfast sweet tooth cravings as much as they do mine.

• 1-2 bananas

• 1 TSP Almond Extract Certified
• 4 TSP Bob’s Red Mill Garbanzo Bean Flour – 16 oz.
• sliced almonds (optional)

• 2 TBS butter

• 2 eggs

Add all ingredients to a Vitamix or blender

2: Get cookin’!
Heat butter on medium in a frying pan or griddle. Very slowly pour the mix into the pan until the desired size. Flip when you see the edges turn golden brown. Repeat until you’re out of batter.  The above recipe should make about 4 pancakes, blend additional ingredients if necessary.

3: Serve.
If dressing up your pancakes, deck out with slivered almonds, bananas, and syrup. To be honest, these are pretty sweet on their own and in my opinion do not need any syrup at all, but I’ve been known to barely have a sweet tooth, so you do you baby! #TREATYOSELF

I hope you enjoy!
