In the world I live in delicious or even decent sandwiches are a distant memory. Fluffy gluten free bread can be hard to come by and I am currently doing my best to live to an ovo-lactco-pescatarian diet. Sounds ridiculous when I say it but it’s the truth. I’ve been limiting my cheese, egg, and seafood intake while completely cutting out land animals like beef, chicken, and pork (which I haven’t eaten for about a year).
So, WTF do I put on a sandwich?
I’ve been trying to figure this out for a while now and I think I’ve hit the sandwich jackpot. A few weeks ago myself, my husband and some friends went for a little day trip to Anza Borrego desert and I needed to pack us a lunch and came up with an epic combo.
Seeded Glutino Bread – One of my favorite gluten free breads! Fluffy, and usually doesn't have a giant hole in the middle like most GF bread tends to have. #YASS
Chao Coconut Herb Cheese – Honestly, I am obsessed with this stuff, I eat it by itself all of the time. I eat it with crackers, I eat it with everything. It’s the most creamy vegan cheese I’ve ever had that you can eat without melting. The herb cheese has flavors of oregano and black pepper which is perfect for sandwiches in my opinion! Their cheddar version is great too if you're not into the whole herb thing.
Beyond Meat Grilled Chikn’ Strips – I put this stuff in salads and I really wasn’t sure what would happen when I added it to a sandwich, but it was a total WIN!
Farmers Market Finds – Butter leaf lettuce, onion and sunflower micro greens, cherry tomatoes, and cucumber.
Avocado – I brought this with us whole and didn’t cut the avo open until we were ready to eat so it stayed fresh, so it isn’t pictured here.
I added a little salt, pepper, evoo, and vinegar too.
Next time I might add a little bit of vegan mayo to keep everything from drying out. The avo, tomato, and cucumbers kept the sandwich moist, but being in the desert made me crave something extra refreshing, any other day it probably wouldn’t have even bothered me though. Oooooo and maybe I’d add pickles too. I freaking love pickles, call me weird or whatever I just love the salty vinegariness of them!
Every time I look at these photos it makes me want to make a sandwich pretty much immediately. Like, my mouth may or may not be actually watering right now.
