I don’t know about you, but I can eat avocado on just about anything! Bonus, avocados are packed with nutrients: Vitamin K, Folate, Vitamin C, Potassium, Vitamin B5, Vitamin B6 and Vitamin E just to name a few. I’ve tried so many renditions of avocado toast and my final verdict (for now) is less is more. So here is my favorite short and sweet recipe for avocado toast. Give it a try and let me know what you think. I’d love to hear what you add to this to make it unique to you!
1. Mash one avocado into a small bowl.
2. Squeeze the juice of ½ to 1 lemon into the mixture, and stir. You don’t want it there to be a ton of liquid, just good flavor.
3. Toast two slices of your favorite bread (for me it is the Whole Foods brand gluten-free bread that is in their frozen section or Costco makes a great multi-grain and white gluten free bread).
4. Spread the mixture onto the toast. Top with red chili flakes and sea salt.
TIP: If you want to up your protein game with this one, scramble an egg or two and toss on top.
